Pizza cooked and consumed out-of-doors is one of life's great pleasures. To bite into a perfectly cooked pie, with a crackling bottom crust and fragrant tomato sauce still bubbling on top, is to experience as close to a perfect food as you can make anywhere. When you consider that making the pizza yourself costs less, tastes far better, and is ready much faster than going out or having it delivered, the comparison comes down solidly in favor of the home-made variety. There is a common misconception that making pizza at home has to be messy and difficult - let's dispel that myth today, shall we? We will begin with the idea that baking outdoor pizza is more of a 'technique'...
This is a fun and very simple recipe, and the results are extremely tasty. These corncakes are the perfect light lunch, or they make an excellent side dish to a larger meal - they would be amazing next to some chile-braised short ribs. The recipe was written for a cool blog called Pardon the Dog Hair, and there are a lot of recipes on this site that look like they would adapt really well to the griddle. Even serious griddlers cook a few things in the house though, so you should visit and try all of them. The complexity of flavors in this recipe were a surprise - the corn, serrano pepper, cilantro and garlic all come through, and you...
Tonight, like a lot of America, we at Little Griddle are watching basketball. The games will be great, but there are a few creature comforts that make watching sports better - a great couch, a frosty beverage, a giant high-definition screen.... and a fantastic sandwich. Tonight, we'll use halftime to make something special. In this case, special refers to something truly easy, and very tasty - a riff on the classic Reuben sandwich. We saw this fabulous sausage and cabbage recipe on Nigel Slater's excellent blog, and we think it would be ideal to be adapted to the outdoor griddle. Simple, high quality ingredients abound, and the cabbage is such a nice counter to the richness of the meat. We'll try this out soon, and if you happen to give it a shot send us an email and we'll post your picture. Have a great weekend everyone!
